One of the most alarming examples is Potassium Bromate, a flour “improver” used to make bread rise higher and bake more uniformly. Sounds innocent enough, right?

Except Potassium Bromate has been linked to:

  • Cancer in animals (and flagged as a potential human carcinogen)
  • Kidney and nervous system damage
  • Thyroid dysfunction

Countries like the United Kingdom, Canada, Brazil, and the European Union have banned it. But in the United States? It’s still allowed in many baked goods.

Why? Because it’s GRAS.
